Tomato Basil Jam
Caprese that fits in a jar. Paste tomatoes and garlic cooked long and slow, then basil twice — a whole bundle steeped in the last twenty minutes for depth, and a fresh handful stirred in off the heat so the top notes actually survive. Cut the same morning it's made, because basil picked in the afternoon makes a flatter jam. No cinnamon, no smoke, nothing to hide behind.

Garden Pepper Jam (Mild)
Bell, Lunchbox and Cajun Belle peppers diced fine and suspended in the jar like confetti caught mid-throw. Sweet arrives first; the jalapeño turns up somewhere near the back, just enough to keep you honest. This is the block-party jam — pour it over a block of cream cheese, put out crackers, accept the compliments.

Roasted Garlic Confit Jam
Twelve whole heads of garlic roasted until the cloves squeeze out like butter, then folded into honey, olive oil, rosemary and thyme. Slow roasting takes every sharp edge off it — what's left is deep, sweet and savory, closer to a confit than a condiment. Spread it on good bread and dinner becomes an event. Roast chicken, a steak, or a spoon when nobody's watching.

Classic Bacon Onion Jam
